What is yeast extract?

Yeast extract is derived from the same yeast species used in baking and brewing through a process called autolysiswhere the yeasts own enzymes break down the cellular contents. The cell walls are removed, leaving behind a concentrated, soluble mix of proteins, free amino acids, nucleotides and B vitamins. Its classified as a flavour ingredient and flavour enhancer, and its available as a paste, powder or liquid depending on your application. 

What is yeast extract used for?

Yeast extract is used wherever you need to build or reinforce savoury flavour, especially in formulations where the natural flavour foundation is limited or has been compromised during processing. In meat and plant-based products, it helps deliver the depth and roundness that animal protein would otherwise provide. In soups, sauces and condiments, it adds body and complexity without adding a distinct flavour of its own. In ready meals and instant noodles, it restores the taste lost through high-temperature processing.

Does yeast extract need to be declared as an allergen?

Yeast extract is not listed as one of the 14 major allergens under UK or EU food labelling regulations. However, if youre formulating for consumers with specific sensitivities, its worth checking with your regulatory team, as individual responses to yeast-derived ingredients can vary. 

Use levels vary depending on the application and the flavour intensity youre targeting. Still, yeast extract is generally used at relatively low inclusion rates, often between 0.1% and 2% in the finished product. Our technical team can advise on the appropriate starting point for your specific formulation.
